Our go to Turmeric Coconut Energy Balls


It’s no secret that we produce a ton of almond pulp, this is a go to recipe to make use of that amazing, nutrient-rich pulp! Energy balls are one of our favourite snacks that allow you to get creative in the kitchen and incorporate a variety of superfoods with flavours you love!

Total time: 10 minutes

Serving Size: 10-15 Energy Balls

Ingredients:

½ cup of almond pulp

1¼ cup of oats

¼ cup of chia seeds

¼ cup of hemp hearts

1 cup of shredded coconut

½ cup of nut and seed butter

1/3 cup coconut oil

2 tablespoons of raw honey or maple syrup

1 teaspoon cinnamon

1 teaspoon of maca

1 teaspoon of vanilla

Instructions:

In a large bowl combine dry ingredients: Almond pulp (if you don’t have almond pulp just leave it out), oats, chia seeds, ½ cup coconut flakes (the other ½ cup is for rolling the finished balls in), cinnamon, maca, hemp hearts and turmeric.

In a separate bowl, combine wet ingredients: Nut and seed butter, coconut oil, raw honey or maple syrup and vanilla. Melt for 30 seconds in microwave or in a glass bowl over boiling water. This will make evenly combining ingredients a lot easier!

Pour your wet ingredients into the bowl with the dry ingredients and mix together with clean hands. Once combined form one inch balls with your hands and roll in shredded coconut. Refrigerate and enjoy!!
